STEPS

Step 1: Season & Brown the Meat:

Heat 1-2 tablespoons of vegetable oil in a large pot or Dutch oven over medium-high heat.

Add the seasoned cubed chuck roast in batches (to avoid overcrowding) and brown on all sides. This will take about 5-7 minutes. Once browned, remove the beef and set it aside.

Step 2: Sauté the Veggies:

In the same pot, add a little more oil if needed. Add the finely chopped red onion and cook for 2-3 minutes until softened.

Add the minced garlic and sauté for another 1-2 minutes, stirring constantly to avoid burning.

Step 3: Build the Base:

Stir in the tomato paste and cook for about 1-2 minutes until it darkens slightly, enhancing the flavor.

Add the chopped carrots, celery, and potatoes, mixing well to combine.

Step 4: Add the Seasonings:

Sprinkle in more garlic powder, onion powder, Creole seasoning, black pepper, sea salt, and the herbs and spices seasoning. Stir well to coat the vegetables and meat in the seasonings.

Step 5: Add Stock and Simmer:

Pour in the beef stock until it fills the pot about halfway, then stir in the Better-than-Bullion for an extra flavor boost.

Drop in the fresh bay leaves, thyme, and rosemary. Stir everything together.

Step 6: Slow Cook the Stew:

Bring the mixture to a gentle boil, then reduce the heat to low.

Cover the pot and simmer for 1.5-2 hours, or until the beef is tender and the vegetables are cooked through.

Step 7: Final Taste Test:

Remove the bay leaves and adjust the seasoning if needed (add more salt, pepper, or herbs as you like).

Step 8: Serve and Enjoy:

Serve the stew hot, with a warm slice of bread (my husband bakes the absolute best Garlic Naan) or over rice if you like.

Enjoy your homemade comfort food, packed with love and flavor!

A Few Extra Bonus Tips:

  • For extra richness: You can add a splash of red wine while cooking the beef to deglaze the pot after browning. This adds depth to the broth.
  • Thickening the stew: If you prefer a thicker stew, sprinkle in some all-purpose flour (1-2 tbsp) to the vegetables after sautéing and before adding the broth. Stir well to coat the veggies and then proceed with the recipe.
  • Freezing leftovers: This stew freezes wonderfully for up to 3 months. Just let it cool completely before storing in airtight containers.

Now you’re all set to make a cozy, melt-in-your-mouth beef stew that’s sure to please everyone at the table! Don’t forget to say grace!
